Mushroom Puff Pastry Pinwheels
These savory pinwheels are the perfect bite-size treat for any occasion, from casual gatherings to elegant soirees. Easy to prepare and irresistibly delicious, they can be made ahead and baked fresh for a warm appetizer guests will love.
makes about 1.5 dozen
Ingredients
- 1 teaspoon olive oil
- 8 ounces cremini, button, or other mushrooms, finely chopped
- 2 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1/8 teaspoon fine sea salt
- 1/8 teaspoon coarsely ground black pepper
- 1 sheet refrigerated or frozen-and-thawed puff pastry
- All-purpose flour
- 1/2 cup (2 ounces) freshly grated Parmesan cheese
- 1/2 cup (2 ounces) shredded mozzarella cheese
- 8 to 10 slices salami or prosciutto, thinly sliced
- 1 egg, beaten
- 1 tablespoon water
Preheat oven to 400°. Line a baking sheet with parchment paper or nonstick aluminum foil.
Heat olive oil in a skillet over medium heat. Add mushrooms, garlic, thyme, salt, and pepper. Cook, stirring frequently, for 8 to 10 minutes or until mushrooms release moisture and begin to brown. Remove from heat and let cool slightly.
Roll out puff pastry sheet on a lightly floured surface to smooth any creases. Spread mushroom mixture evenly over pastry, leaving a 1/2-inch border around edges.
Sprinkle Parmesan and mozzarella evenly over mushrooms. Lay slices of salami or prosciutto over cheese.
Roll puff pastry into a tight log, seam side down. Slice log into 1/2-inch-thick pinwheels and arrange on prepared baking sheet, leaving about 1 inch of space between each piece.
Whisk together egg and 1 tablespoon water. Brush tops of pinwheels with egg mixture. Bake for 15 minutes or until puff pastry is golden and crisp. Let pinwheels cool slightly before serving.
