Hope is something that I’ve definitely learned to appreciate and cherish. I was diagnosed with Ulcerative Colitis when I was 16. After my first flare, I was in remission for 6 years. I went to college, moved to NYC, and began pursuing my acting career. I was in the middle of a show last year, when my UC reared its ugly head and I began flaring again. I had to move home for treatment. This time, none of the medications worked. Mega drugs, homeopathic remedies, holistic approaches, natural medicines, healing touch, faith healers. You name it. I tried it. No pill, powder, or potion could knock my UC back into remission.
The next step was surgery. I decided that I was going to take my health into my own hands and heal myself through the food I was eating. I researched and tried a number of gluten free diets: the Maker’s Diet, the Body Ecology Diet, and my saving grace: the Specific Carb Diet. After 10 excruciating months of flaring, I finally kicked it back into remission, got my health back and am now living abundantly in NYC.
But as I look back at the amazing health journey I endured, I decided that I can’t keep it to myself. Through my blog, I have found that there are so many others out there going through their own health trials, and need support and encouragement as well. I hope this cookbook can offer just that.
